Mark is an award-winning chef, dedicated forager, and passionate teacher of all things food.  Cornwall born and bred, Mark knows everything worth knowing about his homeland and its bountiful offerings, having explored its hidden nooks and crannies on land and sea.


Earning his culinary stripes as a teenager under the stewardship of Rick Stein, Mark’s career spanned 17 years across the restaurant group, rising to Head Chef as well as setting up Stein’s Cookery School in Padstow where he was a senior lecturer and course curator for 8 years.


If he’s not cooking up a storm for your event, you might spot him out on the shoreline foraging for mussels, kayaking with his kids, or down at the Fat Hen running a workshop for fellow lovers of wild food.  Mark is a regular contributor to radio and TV on food sustainability and provides consultancy services to restaurant owners throughout the country.

Favourite Dish:

Freshly foraged Mussels, Olive Oil, Sea Salt, Black Pepper cooked over a Tranger and served with a cold glass of Rattler.

David has spent the last 20 years in the food and hospitality industry.  From the remote hills of the former Czechoslovakia to working in some of the most prestigious hotels in Europe and North America, he’s also managed his own artisan brandy business in Prague before a chance opportunity had him heading to Cornwall, where he met Mark and set up The Wood Fired Kitchen. 


When not organising your event, David is most likely to be found snowboarding in the Alps or tinkering with Dish Cornwall’s outside bar and kitchens.

Favourite Dish:

It's hard to pinpoint one favourite dish. I love nothing more than getting around a table with friends to share lots of different small plates. Full of intense flavours, the combinations are delicious. Authenticity is key to me, when I'm travelling I like to seek out the best place to try traditional local dishes.
